Friday Find ~ My Spirit Animal...Well Creature..

Who would have thought I would find my spirit animal on a walk? Is it really my spirit animal, or just a chance sighting I thoroughly enjoyed? We have been doing well getting our walks in. Oh yes, I have a walking partner now! I finally got hubby to start exercising. Even if i go a slower pace than when I am alone, it is great to have some company. Our walks bring us to the North Sound. If you follow me , you should recognize the views. I try to take a picture every day, thinking it would be interesting to see the slight differences each day. Honestly I think some days are just so beautiful, other are more subdued. A different view each time really. But perhaps I am the only one that finds it that way, as the moods often highly affect my interpretation of the views. And I may be the only one who never tires of these same place views. Walking on Wednesdays ~ Motivation is Hard, Yo ~ BUT ~ Does Have Its Rewards

Motivation. It is hard, yo. Especially to get out the door, and drive to have a swimming workout. from teespring.com It is not uncommon for me to have major motivational problems to do this. Especially when my coach (hubby) says he is not up for going with me. I sit and battle with myself that I really SHOULD go, but don't want to ~ it takes so much preparation to go. Both physically and mentally. These help, a little gift I got myself - I LOVE these goggles. He usually says, after I whine about the struggle to him, ' Just go if you're gonna go !'  His way of motivating. Gee, thanks coach . I guess it is somewhat effective. I have this struggle nearly every time I plan to go for a swim workout, so I often go to Pinterest for motivation, as one does. Usually, it works: his words in my head and reading all the motivational things I find.  This made me think about the whole process that makes it so hard to do. Meal Planning ~ Taco Tuesday, Meatloaf Monday, Spaghetti Sunday, Whatever Wednesday

If I hadn't made it clear in any of my earlier posts, I think I have hinted at it, planning dinner stresses me out most of the time. I have tried having the kids cook, hubby cook, asking for requests, and  planning days ahead . Ultimately, these things fade away, and I am back to stressing about what to cook at the last minute , order , or suggest for dinner. This morning, having this discussion with my 2 kids who had the luxury of a 2 hour delay of school, we had some fun with weekly dinner plans. Today, being Tuesday and having our oldest son coming home from college who loves anything as long as a tortilla is involved, we decided to have our 'Taco Tuesday' . This is a popular one we have been doing for years now. Recipe ~ Baked Costa Rican Style Tilapia with Rice and Beans

I am notoriously bad at cooking fish. I do not like pan frying it because it sticks to my pans and falls apart so easily. Deep frying it, I always get burned, and have the same problem of it falling apart. Baking it, well in the past when I tried baking fish, let's just say we ordered pizza that night. But I was determined to find a good fish recipe I could handle, because we are all sick to death of chicken!   This fish recipe sounded just like something we all could eat and enjoy. (thank you Food Network )  But of course, I did not have all the ingredients on the list, so I tweaked it with what I had on hand. Here is my take.I substituted parsley and tarragon for the cilantro, and lemons for the limes. Plus, I used just the pineapple juice instead of the chunks of pineapple. Walking on Wednesday ~ Burnt. Out. But I just keep swimming.....

Yup. Think it finally has hit me. I. Am. Burnt. Out.   How do I know? It could be that I wake up every day wishing for a vacation.  - Or -  That when I am getting ready to go in to work I just wish I could hire someone to go in for me.  - Or  - That I can't even find the motivation to get out there and run/walk (knowing this usually gives me the energy to get through the day.) - Or - On my one day off I spend in sweatpants and fluffy socks, not brushing my hair, not doing any chores, barely getting off the couch. I couldn't even get up to put the kettle on for a nice cup of tea.
